It is not known which of them is more important in this dish: daikon - a close relative of radish, a large root vegetable with a smooth white skin or red caviar. They combine wonderfully and surprise all eaters: Why didn’t we think of such a dish before?!
Cut the daikon into thin, wide noodle-shaped strips with a paring knife.
Dip vegetable noodles in hot water with lemon juice and salt for 30 seconds. Take out, dry on a paper towel.
Make noodle nests. Put the caviar in the center, garnish with a mint leaf. Serve.
