Prepare the dough. For the right dough, you will need flour, 4 eggs and salt. Mix these ingredients in a deep bowl or on a cutting board. Knead the dough well. It should be smooth and elastic. Leave it for 30 minutes, wrapped in cling film so that it does not dry out.
Make the filling. Melt the butter in a frying pan and add the spinach. Simmer over low heat for 5 minutes. Cool. Transfer to a deep bowl, add ricotta to the spinach and stir. Finely chop the parsley. Pour it into the spinach and cheese filling, add bread crumbs, nutmeg, grated cheese and 1 egg. Salt and pepper. Transfer to a blender bowl and grind until smooth.
Make spinach ravioli. Divide the finished dough into 2 equal parts. Roll them out into layers. The thickness of each should not be more than 2 mm. Place portions of the filling, approximately the size of a walnut, at equal distances from each other. Place a free layer of dough on top of the dough with the filling. Cut the workpiece into squares so that the filling is exactly in the center. Press the edges of the squares with a fork. Boil water in a saucepan, add salt. After boiling, add the ravioli. Cook them for 10 minutes.
