Start frying the vegetables. Place the mushrooms, broccoli and carrots in a heated frying pan and fry for 7-10 minutes. Add a little water, salt and simmer under the lid until done for about 10 more minutes. When the vegetables are done, add the spinach and stir for 1-2 minutes. Then remove from heat.
Prepare the quinoa. Heat a dry frying pan and fry the grains until golden brown over medium heat. Reduce heat and add water to cover the grains by 0.5-1 cm. Salt to taste and cover with a lid. Cook for 15-20 minutes over low heat until the water is completely absorbed. The quinoa will become soft and increase in size.
Combine ingredients. Mix cooked quinoa with vegetables. Add salt and pepper if necessary. Let it warm up in a frying pan for about 2-3 minutes.
