
Cut the banana into circles and crush it with a fork. Don't forget to leave a few slices of banana for decoration. For convenience and speed, you can use a blender.

In a saucepan or small pot, mix water with sugar and heat it up. It should be a homogeneous mass. Combine the resulting mass with banana puree.

While the mixture is cooling, separate the yolk from the white and beat the white.

Add the egg white to the rest of the ingredients and mix gently. After that, you can pour the mixture into buttered molds and bake in the oven.

Decorate the finished soufflé with the remaining banana pieces.
