To prepare sugar syrup, bring water to a boil, add sugar, wait until it dissolves and leave to cook for 7-10 minutes over low heat. Squeeze lime and strain.
Peel and cut apples into thin triangles, blanch in sugar syrup.
Pour apples with syrup and leave for 10-15 minutes.
Knead the dough. Make a thin layer and refrigerate for 3 hours.
Make small puffs from the dough, grease with butter and lay out the apples. Bake 15 minutes until done.
When serving, garnish the apples with a sprig of thyme.
