Grate the potatoes. Add the egg and grated cheese, mix. Add rice flour, pepper mixture and salt to taste. Mix everything well again.
Heat the frying pan and put the resulting mass. Fry on one side for 5 minutes on medium heat without a lid. Do not use oil when frying the flatbread. The potato flatbread has a good liquid consistency, the dish will fry "in its own juice".
Carefully flip the flatbread over and fry for 5 minutes over medium heat. The potato-cheese flatbread is ready. To prevent the flatbread from falling apart while flipping, cover it with a plate equal in diameter to the frying pan and flip it over.
