Cut the onion into half rings and the carrots into circles.
Cut the tomato into large wedges. Finely chop the hot chili pepper. Cut the pumpkin into even squares.
Heat a deep frying pan with a little sunflower oil. Once the pan is well heated, put the onion and carrot in it. Fry the ingredients, stirring, over moderate heat until the onion is golden.
Add tomatoes to the pan and simmer the ingredients, stirring, for 5 minutes.
Once the tomatoes are soft and have released their juices, add the hot peppers to the pan and pour in the soy sauce.
Pour some water into the pan, add salt and spices to taste. Simmer the ingredients on low heat under the lid for 5-7 minutes.
Place the pork ribs in a baking dish, pour the stewed vegetables over them. Place the dish in an oven preheated to 200 degrees for 20 minutes.
Once the vegetables are browned, carefully remove the pan from the oven and place the pumpkin pieces on the ribs. Sprinkle the pumpkin with spices and simmer the dish until done, about 60 minutes.
Place the finished ribs on a plate and pour over the meat juice. Place the vegetables on top.
