Try this melt-in-your-mouth crunchy meat. Delicate combination of pork with apples and onions!
Wash and dry the meat, rub it with salt and pepper. Make shallow oblique cuts.
Peel apples and onions and cut into eighths.
Fry the meat until golden brown, put in a baking dish, add apples, onions, thyme and bay leaf. Pour in the juice and broth, cook in a mold covered with a lid (or foil) at 160 degrees for 2.5 hours. Then remove the lid and cook for another 30 minutes at 180 degrees. Boil the resulting liquid until it thickens.
Serve the meat with onions and apples, pouring over the sauce.
