Prepare the spices. Chop the bay leaves by hand and place them in a deep bowl, add salt, pepper, sun-dried tomatoes, and chopped garlic. Rub the mixture thoroughly with a spoon.
Prepare the meat for roasting. Make holes on different sides of the meat piece with a long thin knife, approximately 20-25 punctures. Fill each with a mixture of salt and spices.
Bake the pork in the oven. Place the prepared pork in a sleeve, remove the air, and seal. Bake the meat in an oven preheated to 220 degrees for 2 hours.
