Grate the cheese on a fine grater.
Sift flour with baking powder into a deep bowl, add sugar and salt and frozen butter pieces. Crush all the contents into crumbs.
Add cheese, rosemary and milk and stir.
Add randomly chopped olives to the almost finished dough.
Stir again until the filling is evenly distributed.
Roll the dough into a “sausage”, wrap it in cling film and put it in the freezer for 15 minutes.
Take the frozen dough out of the freezer, cut into 1.5-2 cm thick circles and place on a parchment-lined baking sheet. Bake in an oven preheated to 180 °C for 30-40 minutes until done.
Remove cookies from oven, let rest at room temperature for 5 minutes, and transfer to a plate.
