Is it possible to cook something extraordinary from simple pancakes? We answer with all confidence: it is possible. This delicious dessert is proof of that.
Cut apples into thin slices. Place in a bowl, add brown sugar, cinnamon and lemon juice and stir. Leave for 15 minutes for the apples to release their juice.
In a skillet, melt 2 tbsp. l. butter over high heat. Add chopped apples, shaking them from the juice (save the juice). Cover the skillet with a lid and cook for 5 minutes. Stir in the apples and cook for another 5 minutes. Remove skillet from heat and add 1 tbsp. l. honey. Stir and pour in the juice from the bowl.
Place the ricotta and remaining honey in a small saucepan, place over medium heat and bring almost to a boil. You will have a homogeneous liquid mixture. Remove from fire and cool. After cooling, the mixture will thicken slightly.
Brush warm pancakes with ricotta and fold into triangles. Put two pancakes on a plate, put apples on top. Pour juice from pan. Drizzle with additional honey if desired.
