In an empty bowl, mix the eggs with the sugar, vanilla, zest and orange juice. Place the bowl in a container of hot water, but be careful not to let the water get inside. Heat to 72°C, stirring.
Place the container with ice cream in a bowl with cold water and beat with a mixer until the mixture has completely cooled. Pour in the cream. Beat the mixture until fluffy. Place in a mold and freeze for several hours.
