Prepare the sponge cake dough. Separate the whites from the yolks. Beat the whites with sugar. Then add the yolks and flour. Beat again until smooth. Cover the baking sheet with parchment and spread the dough on it. Put it in the oven, preheated to 180 ˚C, for 20 minutes. Roll the finished sponge cake into a roll and cover with a towel.
Make the filling. Grate the lemon and mix with sugar.
Roll up the lemon roll. To do this, unroll the dough, spread the filling over the entire surface and roll it up tightly. Leave it to rest for 120 minutes.
