Boil the knuckle. Put the water with the knuckle on high heat, bring to a boil. As soon as the water boils, drain the whole onion, the remaining 3 cloves of garlic, cloves, black pepper. Salt to taste. Cook for 1.5-2 hours until the knuckle is ready. 30 minutes before the end of cooking, add the bay leaf.
While the knuckle is cooking, make a honey-mustard glaze. Grind 1 teaspoon of the pepper mixture thoroughly in a mortar. Mix honey with mustard, add crushed pepper. Mix everything thoroughly.
Bake the knuckle in the glaze. Coat the boiled knuckle completely with the glaze, wrap it in foil. Bake the knuckle in the oven at 200°C for 40-60 minutes.
