Cook the rice. Drain the water the rice was in. Transfer the grain to a saucepan and pour 2 cups of cold water. Place the container on high heat. Once boiling, reduce the heat and cover the saucepan with a lid. Continue cooking for another 15 minutes until the rice has absorbed all the liquid. Leave it to steep and cool for another 15 minutes.
While the rice is cooling, make the dressing: bring the rice vinegar to a boil, add sugar and salt. Mix thoroughly until the crystals dissolve. Pour the dressing into the rice and stir.
Make homemade rolls with crab sticks. Wrap a mat with cling film and put a sheet of nori on it. Spread rice on top. Put cucumber strips and a piece of crab stick 2 cm from the edge. Roll the nori tightly. Cut into equal parts with a sharp knife.
