If you want something fresh and light in the hot summer, okroshka is the best option for a simple lunch. Fresh vegetables, sour cream, greens and cool kvass will perfectly fill you up without any extra heaviness. Every housewife probably has her own signature okroshka recipe, and I offer a simple, basic version that can be supplemented to your taste.
Step 1
Boil the potatoes in their skins, cool and peel. Chop finely.
Step 2
Boil the eggs. Peel them and chop finely.
Step 3
Finely chop the onion and scald with boiling water. Finely chop the sausage without boiling.
Step 4
Finely chop fresh cucumbers
Step 5
Combine chopped potatoes, eggs, onions, sausage and cucumber.
Step 6
Pour cold kvass over everything, add salt to taste and a spoonful of fresh sour cream.
