Make the dough. To do this, separate the whites from the yolks and mix the cottage cheese with the whites. Add baking powder, salt and flour. Mix the ingredients thoroughly until a homogeneous white mass is formed and form a lump of dough. It should be quite soft.
Prepare the filling. First, make two eye-shaped khachapuri bases on a baking sheet or baking pan, form the sides, and brush the dough with yolks. Place in an oven preheated to 180 degrees for 10 minutes and begin preparing the filling. To do this, grate the cheese on a medium grater and mix it with the cottage cheese. After 10 minutes, remove the dough from the oven and fill with the cottage cheese and cheese mixture.
Bake the khachapuri. Place the dough with the filling in the oven for another 10 minutes until it browns slightly and the cheese begins to melt. Then crack an egg on top and bake for another 3-5 minutes until the dough is ready, but the yolk remains runny.
