Eggplant is one of the oldest vegetables. It was first grown in India in the first millennium BC. They appeared in Russia in the 17th century and were popularly called "blue ones". Eggplants can be used to make a tasty and filling snack with cheese and mayonnaise. To prepare fried eggplants with cheese, you need to cut them into rings, roll them in flour, fry them in a frying pan and sprinkle with cheese, mayonnaise and garlic. You can leave the eggplants unpeeled, but then the dish will taste slightly bitter.

Fry the eggplants. Dip each circle in flour on both sides. In a heated frying pan with vegetable oil, fry the eggplants until golden brown, 3-4 minutes on each side.

Combine the eggplants with the other ingredients. Place the vegetable pieces in layers on a plate, sprinkle each layer with grated cheese and chopped garlic, salt and pepper. Add mayonnaise on top.
