In a large, convenient bowl, mix together the cottage cheese, raisins, 1 egg and vanilla sugar.
Sprinkle a little flour on the work surface to prevent the dough from sticking. Place a sheet of defrosted dough on it.
Lightly dust the rolling pin with flour and roll out the dough a little to make it a little thinner.
Cut the dough into squares.
On each square, make neat cuts as shown in the photo.
Break an egg into a bowl and stir. Use a brush to apply the egg mixture to the edges of the square, then fold the cut corners diagonally, thus creating an envelope of dough.
Carefully spoon the filling into each prepared square of dough.
Line a baking tray with baking paper and place the envelopes on it.
Using a culinary brush, brush the top of the envelopes with the egg mixture. Then place the baking tray in a preheated oven. Bake the envelopes at 180°C for 15-20 minutes until done.
Once the envelopes are baked, remove them from the oven and let them rest for a few minutes. Then transfer them to a serving dish and sprinkle with powdered sugar on top.
