Start preparing the dough. Add the egg, salt and sugar to a deep dish. Pour in a glass of mineral water and mix thoroughly.

Knead the dough. Add flour in small portions, mixing well. Knead the dough with your hands for 7-10 minutes until it becomes elastic. Put the dough in a bag or wrap it in cling film and leave for 20-30 minutes.

Make dumplings. Take the dough out of the bag. Sprinkle the surface of the table with flour. Separate a piece of dough about the size of a fist from the total and roll it out to a thickness of 2-3 mm. Cut out circles with a diameter of 4-6 cm with a shot glass. Put the minced meat in the center and press the dough well along the edges. Do the same with the remaining pieces of dough and minced meat.

Cook the pelmeni. Place the finished pelmeni in boiling water in a saucepan. Add salt, pepper and bay leaf to taste. Cook for 8-10 minutes. Place the pelmeni on a plate. Add butter or sour cream to taste.
