Wash the breast, dry it. Make notches with a knife from the side of the skin, rub with salt and pepper.
Fry the breast in a pan without fat from the skin side until golden brown. Drain excess fat, turn the duck over and fry on the other side, 2-3 minutes.
Preheat oven to 200°C. Put the breast on the wire rack, substituting a baking sheet underneath to drain the fat. Bake 8-9 minutes. For 1 min. before the end of baking, grease the skin of the duck with honey.
Put the finished breast on a plate with raspberries, strawberries and mango slices. Garnish with herbs and serve immediately.
