Start preparing the dough for diet pancakes. Pour kefir into a container. Add soda, mix well. Then add the egg, beat everything with a mixer at low speed. Add a pinch of salt and mix again. Gradually add flour to the dough. Do this slowly and stir constantly. Watch the consistency of the dough. It should not be too liquid.
Start baking pancakes. Heat the frying pan well. Take only a frying pan with a non-stick coating, otherwise the pancakes will stick. If you still can’t fry pancakes in a dry frying pan, you can grease it with a little oil (you can use coconut oil instead of sunflower oil for frying). Pour some dough into the heated frying pan (about half a ladle), distribute it over the frying pan using circular horizontal movements. For convenience, use a special spatula.
Fry each pancake for 3-4 minutes on each side. Make sure they don't burn, but are still golden and rosy. After that, cover the entire stack of pancakes with film or a towel so that they don't dry out.
Serve pancakes with fruit and yogurt.
