Peel the ginger, cut into small pieces, pour boiling water and cook over medium heat for 20 minutes. Remove the decoction from heat and strain.
Wash dates, remove pits. Put the dates in the ginger broth, cook for 10 minutes. Remove the dates with a slotted spoon.
Without removing the broth from the heat, add honey and lemon, cook for another 5 minutes. Remove from heat, cool and pour into glasses. Separately serve dates boiled in ginger broth.
