Prepare the potatoes. Use a knife to cut the potatoes into thin slices up to 2 mm thick. Cover the slices with water and rinse to remove starch. Remove excess moisture with a paper towel. Place the potato circles in one layer on a board and sprinkle with salt and spice mixture.
Fry the chips in a frying pan. Heat oil in a frying pan and lay out the potato slices in one layer. As soon as they become golden, turn the potato pieces over and fry on the other side. When the chips are ready, blot them with a paper towel to remove excess oil. Place on a plate.
