Prepare the chicken meat. Mix salt, garlic and ground black pepper, rub the chicken meat with this mixture, let stand for 60 minutes.
Fry the celery and onion. In a frying pan with vegetable oil, fry the onion for 1 minute, add the celery and continue frying for 6-7 minutes.
Prepare the chicken and vegetables for baking. Place the herring and onion on the bottom of a heat-resistant form. Place the chicken meat on the onion bed. Insert apple slices between the chicken pieces. Pour white wine over everything and sprinkle with thyme. Cover the form with foil and place in an oven preheated to 180 degrees.
Bake the dish. Let the meat and vegetables bake under foil for the first 30 minutes, then remove the foil and bake for 25-30 minutes until golden brown.
