Remove the crusts from the bread, cut the flesh into small pieces, then chop smaller, almost into crumbs. Pour the bread into a bowl. In the second bowl, beat the egg with a pinch of salt and cream. In the third, mix flour with salt, pepper and paprika.
Beat the chicken fillet into 1 cm thick layers. In a large frying pan (or two at once), heat the oil with a 1 cm layer.
Roll each schnitzel first in flour (shake off excess), then in egg (shake off excess) and bread slices. Place immediately in hot oil.
Fry the schnitzels until golden brown on both sides. Put the finished ones on crumpled paper towels to drain the oil. Serve hot with a lemon wedge.
