1. Cut the cheese into quarters, brush with honey, sprinkle with sugar. Quickly caramelize the cheese over low heat in a skillet on both sides. 2. Put on parchment paper and put in the cold for 1 hour. Cut strawberries, apricots and figs into 4 parts. Take 4 deep plates, put in each a piece of caramelized cooled cheese. Lay fruit on top. 3.
