Cut the tomatoes into slices approximately 5 mm thick.
Cut the mozzarella into 5mm thick slices as well.
Place slices of cheese and tomatoes on a plate, alternating them to form a ring.
Place a mound of basil leaves in the center of the cheese and tomato ring.
To make the balsamic sauce, combine equal parts vinegar and sugar in a small saucepan. Then bring the mixture to a boil and continue cooking over medium heat for about 7-10 minutes. The liquid should evaporate by 1/3 and thicken slightly. Remove the sauce from the heat and let it cool. As it cools, it will become even thicker.
Dress the salad with olive oil, salt and pepper to taste. Then pour balsamic sauce over everything, but do not overdo it, so that it does not interrupt the taste of tomatoes and cheese. Enjoy your meal.
