
Chop cabbage, potatoes and tomatoes.

Grate the carrots on a coarse grater.

Chop the onion.

Chop fresh parsley and garlic.

Place the onions, tomatoes, garlic and carrots in a preheated frying pan.

Add tomato paste to the pan and stir the ingredients. Cook the frying over medium heat for 3-5 minutes. Add salt and pepper to taste.

Place potatoes and cabbage in a saucepan. Cook for 3-5 minutes. Add the fried mixture to the soup.

Mix the ingredients thoroughly and cook the soup for another 3-5 minutes.

Place the shchi on serving plates, garnish with chopped herbs and serve. Enjoy!
