
Cook the meat. Place the pork in a saucepan and fill it with water to the brim. Add the onion skins and unpeeled garlic. Cook the pork for 2 hours, making sure the water doesn't boil away.

Add spices to the meat and finish cooking. Cool the piece of meat, dry it slightly, rub with a mixture of spices and mustard, wrap in foil or cling film. Put the pork in the refrigerator and leave for 10-12 hours.
