Knead shortbread dough - pour flour into a bowl, cut butter into small pieces in the same bowl. Rub butter with flour. Add the yolk of one chicken egg and 2-3 tbsp. l. cold water. Knead the dough.
Roll out two small circles according to the size of the baking dish. Put in forms, forming baskets. Pierce the bottom of the baskets a few times with a fork to keep the bottom from puffing up. Place in oven to bake until golden brown.
Boil broccoli until half cooked. Drain the water.
Bulgarian pepper cut into small squares, stew in a small amount of vegetable oil until half cooked.
Chicken egg, protein left after preparing the dough, cream, salt, spices (to taste), beat lightly.
Put broccoli, peppers into the baked baskets, pour over the egg mixture (so that it does not overflow over the edges of the baskets). Gently crack a quail egg into the middle of each basket. Bake 5-10 minutes.
