But vegetables are not only beautiful. They are also a real treasure trove of vitamins and minerals. Carotene in carrots, potassium and fiber in bell peppers, vitamins PP and B in eggplant. The simplest and easiest way to enrich your body with everything it needs is to eat a portion of baked vegetables for lunch.

Cut the carrots.
