
Prepare the marinade. Mix soy sauce, honey and black pepper. Add salt and crushed garlic to the marinade and stir. Rub the duck carcass with the marinade on all sides, wrap it in cling film and put it in the refrigerator for 12 hours.

Prepare the duck. Wash the apples, cut them into 4 pieces and remove the core and pits. Take the duck out of the refrigerator, remove the film. Stuff the duck with apples and fasten the edges of the bird with toothpicks. Wrap the duck in foil and put it in a baking dish. Bake in the oven at 180 C. After 90 minutes, take the duck out, remove the foil and put it in the oven for another 20-30 minutes until golden brown.
