In a separate bowl, combine mayonnaise, hot pepper, chili flakes, salt and pepper to taste.
Rub the chicken with salt, tie the legs with twine. Grease the chicken with mayonnaise sauce.
Place the potatoes, garlic cut lengthwise, sprigs of thyme and rosemary, and chicken in a deep dish. Salt the potatoes to taste.
Bake the chicken in a preheated oven at 210 °C for 50-60 minutes, brushing the chicken with mayonnaise sauce every 15 minutes. Also, after 20 minutes, sprinkle the potatoes with olive oil.
