Smoked salmon in this recipe can be replaced with other cold-smoked fish - pike, cod or mackerel, most importantly, not very oily.
Boil the potatoes in their skins, let them cool, then peel. Cut each potato in half lengthwise. Carefully remove the middle, leaving the outer shell 0.7 cm thick.
Wash the peppers, peel and cut into small cubes. Cut the fish in the same way. Cheese grate on a coarse grater. Finely chop the potato pulp, mix with sweet pepper, fish and cheese. Salt, pepper to taste. Fill potato halves with stuffing.
Preheat oven to 180ºС. Place potato halves together, wrap with a strip of bacon, secure with a wooden toothpick. Place on a rack and bake in the oven for 30 minutes.
