A popular oriental dish, an appetizer consisting mainly of mashed cooked eggplant mixed with seasonings (eg, sesame paste, olive oil, lemon juice).
Lay eggplants brushed with olive oil on a baking sheet and bake for 20 minutes. in the oven at 200ºС.
Allow to cool, remove the skin, chop the flesh and put in a bowl. Add 4 tbsp. l. olive oil, lemon juice, ground sesame seeds and garlic.
Season to taste with salt and black pepper. Beat until a homogeneous mass is obtained.
