Pass the olive oil and spinach leaves through a blender. Then add chopped garlic, lemon juice, olive oil, processed avocado, sweet chili sauce and pass through a blender again. Bring to taste.
Heat the oil in a frying pan and fry the rice paper in it.
Place roasted peppers on a plate, place rice chips on top, garnish with avocado mousse and fried oyster mushrooms.
