Separate the whites from the yolks. Mix the yolks with sugar, vanilla sugar, flour, milk and salt.
Remove seeds from apples, grate the pulp, mix into the dough.
Beat egg whites with a pinch of salt, gently fold into the batter.
Heat the pan well, fry the pancakes on both sides.
