Cut the carrots into circles. Core the apples and cut them into small wedges. Peel the apples if desired.
Put the apples and carrots through a juicer or blender one by one. Decide in advance how rich you want the juice to be, with or without pulp.
Mix the resulting juice a little, pour it into serving glasses. Garnish with a sprig of fresh mint. You can use fresh fruit slices and cocktail straws as decoration. Cool the juice in the refrigerator before serving.
