Preheat the oven to 180 degrees. Line baking sheets (approximately 30 x 20 cm) with baking paper. It is important! Otherwise, the cakes will tightly stick to the mold.
Separate whites from yolks. Yolks are not needed.
Place all the almonds in a blender bowl and grind them into small grains. Be careful not to crush the almonds, otherwise the oil will start to stand out. The grain should be crumbly.
Add all the sugar and 2/3 of the total mass of proteins to the almonds (do not beat the proteins beforehand). Process well with a blender.
Add the remaining proteins and finish processing with a blender (with the blender knives, not with a whisk! Be careful. Nothing is whipped in this recipe).
Pour the resulting mass into a bowl, add the sifted flour, mix with a spatula.
Pour the dough into a pre-prepared form, bake at 180 degrees for about 40 minutes until you get a characteristic cracked brownish crust and a breathtaking smell of almond baking.
Cool the finished cake completely, cut into squares, serve.
